If there is one place that is synonymous to Progressive Philippine Cuisine for quite some time here in Manila, it will be Toyo Eatery. This place has been considered as a mecca for Filipino cuisine since it opened its doors in 2016.

Chef Bruce Ricketts who is self-taught has long developed an obsession in perfecting his version of Japanese cuisine. He has been one of the pioneers of intertwining classical Japanese dishes with local Filipino ingredients

Lampara is the next place, head chef RJ Ramos is a good friend as we were both assigned to work in Paris at the same time about a decade ago. I am so happy to see what he has done with the place and the menu.

This was an exceptional meal overall and I am so happy that I got to try southern food here in Atlanta.
